After some thinking it became clear that we cannot assume exe's should not be
cross-compiled.

- rename --subdirectory to --source

- add src, inc, pfx, and sub pre-/post-hooks variables

Also tighten up the rest of the entries not to match in subdirectories.

For example:

In particular, this should be useful when creating *-tests packages.
